September welcomes autumn and also welcomes the famous dishes of Mexican gastronomy, which although they can be enjoyed all year round, on these dates eating them reminds us of the struggle of our people to be free.

Join me to learn about the main Mexican dishes present in almost every Mexican party. Golden tacos, pozole, tamales, tacos al pastor and of course tequila are our stops on this little gastronomic tour that will take place in the blog.

We start with the "tacos dorados"These are mainly tacos (with corn tortilla) stuffed with chicken, cheese or whatever you prefer, cooked in oil and served with cream, onion, lettuce and cheese (I'm already starting to drool).

In the second course, we have the king dish of this national month: "el pozole".. This soup prepared with ancho chilli and guajillo, also contains garlic, onion and other spices, it is prepared with a variety of corn known as "pozolero corn" or "cacahuazintle". There are different varieties of pozole: red and white, and in turn it can have chicken, pork or both; plus a vegetarian version is already cooking.

Then we have the delicious "tamales" which are made with corn pasta and filled with ... whatever one's imagination wants. There are sweets: filled with fruits such as pineapple, strawberries, corn, even nutella; and salty: stuffed with beans, black mole, chicken in green sauce, pork, etc.

It is now time to talk about "tacos al pastor. These tacos, very popular in central Mexico, but known in all corners of the country, are made of a corn tortilla, which contains pork meat previously prepared with a mixture of spices, orange juice, onion inside, garlic, achiote (a paste made of chillies, spices like cumin and oregano). When the meat is ready, it is placed in a "trompo" where it is cooked and the meat is cut into thin layers to prepare the taco which leads to the end of the pineapple which has also been cooked in the "trompo". I think we need something to keep our mouths from going dry, don't you? Well, of course, you can't miss one of the most Mexican drinks and also known worldwide as a symbol of authentic Mexico: tequila.
